Strawberry Balsamic Jam

Anarchy in a Jars's strawberry balsamic jam is the way jam should be: fruity, sweet, tart, and delicious enough to eat alone on a teeny spoon, if that's how you like it. They have been making jams for over ten years and took inspiration from the Italian's with this one. Using just sweet strawberries, real cane sugar, a bit of aged balsamic vinegar to emulsify and balance the berries, and a little lemon juice to add some nice acidity and depth. How do we like to eat it? It's amazing with fresh ricotta on sourdough, on a steak & gorgonzola sandwich (trust us), or classic on a PB&J.
